How do you use a sharpening stone? To get your knife razor-sharp, you go through three steps: pre-sharpening, fine-sharpening, and polishing. Pre-sharpening involves using a coarse whetstone (up to 600 grit) to restore the cutting edge to the correct angle and remove any damage. Then, fine-sharpening with a finer whetstone (600-3000 grit) smooths and sharpens the edge. Place the sharpening stone in a layer of water and let it soak for 10 to 15 minutes. 2. Place the sharpening stone with the coarse grit side up. 3.
